Prep the pan and oven: Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with a parchment sling for easy removal.
Whisk the wet ingredients: In a large bowl, whisk the mashed bananas, sourdough starter, granulated sugar, brown sugar, melted butter, eggs, and vanilla until smooth and well combined.
Combine the dry ingredients: In a separate bowl, stir together the flour, baking soda, baking powder, salt, and cinnamon (if using).
Bring the batter together: Add the dry ingredients to the wet.
Gently fold with a spatula until just combined. Stop when you no longer see streaks of flour. Do not overmix.
Add mix-ins: Fold in chocolate chips or nuts, if using.
Reserve a small handful to scatter on top for a pretty finish.
Fill the pan: Pour the batter into the prepared loaf pan. Smooth the top and add any reserved toppings.
Bake: Bake for 55–65 minutes. The loaf is done when a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
Cool properly: Let the loaf cool in the pan for 10–15 minutes.
Lift it out and cool completely on a wire rack before slicing. This helps set the crumb.
Slice and serve: Use a serrated knife for clean slices. Enjoy plain or spread with butter, cream cheese, or peanut butter.
