Pumpkin Bread Recipe - Soft, Moist, and Perfectly Spiced

Ingredients
  

  • All-purpose flour – 2 cups
  • Granulated sugar – 3/4 cup
  • Light brown sugar – 1/2 cup, packed
  • Baking soda – 1 teaspoon
  • Baking powder – 1/2 teaspoon
  • Kosher salt – 1/2 teaspoon
  • Ground cinnamon – 2 teaspoons
  • Ground nutmeg – 1/2 teaspoon
  • Ground ginger – 1/2 teaspoon
  • Ground cloves – 1/4 teaspoon
  • Canned pumpkin puree – 1 cup (not pumpkin pie filling)
  • Neutral oil (canola, vegetable, or light olive) – 1/2 cup
  • Large eggs – 2
  • Whole milk or buttermilk – 1/4 cup
  • Vanilla extract – 2 teaspoons
  • Optional add-ins: chocolate chips (1/2–3/4 cup), chopped walnuts or pecans (1/2 cup), pepitas for topping
  • For the pan: nonstick spray or butter, and parchment paper

Method
 

  1. Preheat and prep the pan. Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with a parchment sling for easy removal.
  2. Mix dry ingredients. In a medium bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until evenly combined.
  3. Whisk wet ingredients. In a large bowl, whisk pumpkin puree, oil, granulated sugar, brown sugar, eggs, milk (or buttermilk), and vanilla until smooth and glossy.
  4. Combine gently. Add the dry mixture to the wet mixture. Stir with a spatula just until no dry streaks remain. If using chocolate chips or nuts, fold them in now. Do not overmix.
  5. Fill the pan. Pour the batter into the prepared loaf pan. Smooth the top, then sprinkle with pepitas or a light dusting of sugar if you’d like a subtle crust.
  6. Bake. Place on the center rack and bake for 55–70 minutes, until a tester inserted in the center comes out clean or with a few moist crumbs. If the top is browning too quickly, tent with foil for the last 15 minutes.
  7. Cool properly. Let the loaf cool in the pan for 10–15 minutes, then lift it out and transfer to a wire rack. Cool completely before slicing for the cleanest cuts.
  8. Serve. Slice thick for breakfast or thin for snacking. Great plain, with a swipe of butter, or warmed and topped with a little cream cheese.
