Ingredients
  

  • Fruits: Strawberries, blueberries, raspberries, peaches, mango, bananas, limes
  • Dairy: Cream cheese, heavy whipping cream, Greek yogurt, sweetened condensed milk, milk
  • Pantry: Graham crackers, vanilla extract, honey or maple syrup, granulated sugar, powdered sugar, chocolate chips
  • Cookies/Cakes: Shortbread or ladyfingers for layering (for icebox cake)
  • Extras: Fresh mint, sea salt, coconut flakes, crushed nuts (pistachios or almonds)
  • Optional: Lemon curd, store-bought pound cake, flavored gelatin, cocoa powder
  • For Popsicles: Popsicle molds (or small cups) and sticks

Method
 

  1. No-Bake Berry Cheesecake Cups Crush graham crackers and mix with a little melted butter and a pinch of sugar. Spoon into cups and press lightly.
  2. Beat softened cream cheese with a splash of vanilla and powdered sugar until smooth. Fold in whipped cream.
  3. Spoon the cheesecake mixture over the crust. Top with fresh berries and a drizzle of honey.
  4. Chill for at least 1 hour. Serve cold with a sprig of mint.
  5. Peach and Cream Icebox Cake Whip heavy cream with a bit of sugar and vanilla until soft peaks form.
  6. Layer shortbread cookies, whipped cream, and sliced peaches in a loaf pan or dish.
  7. Repeat layers, ending with whipped cream. Sprinkle with crushed cookies on top.
  8. Cover and refrigerate 4–6 hours or overnight so the cookies soften.
  9. Mango Yogurt Popsicles Blend ripe mango with Greek yogurt, a squeeze of lime, and honey to taste.
  10. Pour into molds, insert sticks, and freeze 4–6 hours.
  11. To unmold, run warm water over the outside for a few seconds and gently pull out.

  13. Melt chocolate chips with a touch of coconut oil until smooth.

  18. Finish with a squeeze of lemon and a drizzle of honey. Serve immediately or chill.
